I’ll never quite understand why kale comes in such a giant bag. I don’t mind kale in it’s natural form, and I often use it for salads. It’s also great in soups since it’s so hearty. But here’s a favorite recipe of mine for when you’re looking for another way to use up that bag of kale!

Quinoa, kale, garlic, and thyme to the rescue! I love quinoa patties (or fritters). Eat them plain with a little dipping sauce or aioli, serve them on top of a salad, or make as a side dish. Today I’m stuck home while my bathroom is being remodeled (not by choice, but necessity, lol!), and I enjoyed these little guys with this fabulous aioli. I packed the leftovers for lunch at work with the rest of the dip and some raw veggies. Nothing beats the feeling of gettingΒ ready for work while knowing that lunch is already taken care of!

The great part about this recipe is that it’s easily adaptable, and tastes yummy hot or cold. While this recipe isn’t gluten free due to the added breadcrumbs, you could easily use your favorite gluten free bread to make your own breadcrumbs. I hope you enjoy these tasty patties as much as I do!

 

Quinoa Patties with Garlic, Kale, & Thyme

Ingredients
  1. 2 1/2 cups cooked quinoa
  2. 4 eggs
  3. 3/4 cup breadcrumbs (low carb/gluten free if desired)
  4. 3 garlic cloves, minced
  5. 1/4 cup parmesan cheese (optional)
  6. 1/2 cup kale leaves, chopped
  7. 1/2 tablespoon dried onion flakes
  8. 1 teaspoon garlic salt
  9. 1 teaspoon dried thyme
  10. grapeseed oil to coat pan (or olive oil if preferred)
Aioli
  1. 1/2 cup mayonnaise (I use mayo made with olive oil)
  2. 1 clove garlic, minced
  3. 1 1/2 teaspoons lemon juice
  4. 1/2 tablespoon dijon mustard
Aioli
  1. 1/2 cup mayonnaise (I use mayo made with olive oil)

  5. 1. Place all ingredients into a large bowl and mix well until thoroughly combined.
  6. 2. Scoop a small amount of mixture into your hand and gently shape into a patty about 2 inches in diameter and 1/2 inch thick (you may change the size/thickness, but I find this is easiest to cook evenly).
  7. 3. Heat a large skillet and add oil to coat (about 1-2 tablespoons). Gently place patties into hot skillet, leaving enough room to flip. Allow to brown for about 2 minutes, and carefully flip, browning the other side for 2-3 minutes or until desired. Repeat until all patties are cooked. Add additional oil in between batches in necessary.
  8. 4. Enjoy hot or cold with garlic aioli, on a salad, or as a side dish!
For Aioli
  1. 1. Whisk all ingredients in a small bowl.
  2. 2. Serve immediately or chill.

    Hey Lindsey – I am totally going to make these tonight! (I even have leftover quinoa I need to use!) I thought you might want to know i’m seeing your Aioli ingredients listed twice. Not sure if its just a glitch when the page loads or if it’s on purpose.
